Les entrepreneurs ind\u00e9pendants ne sont parfois pas conscients de la concurrence \u00e0 laquelle ils sont confront\u00e9s pour leur propre survie.<\/p>\n<p>Cette derni\u00e8re \u00e9tude de la Chaire d'innovation METRO se concentre sur les d\u00e9fis auxquels sont confront\u00e9s les restaurateurs et leurs attitudes vis-\u00e0-vis de la formation, ainsi que sur les innovations p\u00e9dagogiques d'autres secteurs d'activit\u00e9 qui permettent la cr\u00e9ation de communaut\u00e9s d'apprentissage. Le concept de l'\u00e9tude repr\u00e9sente une approche innovante de la formation des restaurateurs ind\u00e9pendants. Il tient compte des d\u00e9fis qui existent dans ce secteur, tels que le manque de temps et d'argent, ainsi que des d\u00e9fis \u00e9conomiques, des domaines d'int\u00e9r\u00eat, du niveau de num\u00e9risation existant et des formats de formation pr\u00e9f\u00e9r\u00e9s.<\/p>\n<p><strong>Les principaux d\u00e9fis <\/strong><\/p>\n<p>Les r\u00e9sultats de l'enqu\u00eate ont montr\u00e9 que les plus grands d\u00e9fis pour les restaurateurs ind\u00e9pendants sont les services de livraison, les activit\u00e9s administratives et l'administration du personnel. En revanche, leurs principaux int\u00e9r\u00eats en mati\u00e8re de formation portent sur la gestion des co\u00fbts d'approvisionnement en nourriture, en boissons et autres, ainsi que sur la ma\u00eetrise des techniques de cuisson et la pr\u00e9vision de la demande. Les connaissances acquises sur l'inad\u00e9quation entre les d\u00e9fis identifi\u00e9s et les domaines d'int\u00e9r\u00eat ont permis de concevoir le concept de communaut\u00e9 d'apprentissage. Le concept propose des solutions qui forment les restaurateurs aux sujets qui les int\u00e9ressent, tout en les initiant progressivement \u00e0 des sujets plus critiques. Dans le m\u00eame temps, il d\u00e9clenche un \u00e9change accru entre les restaurateurs.<\/p>\n<p>\"La communaut\u00e9 d'apprentissage offre non seulement un concept de formation cibl\u00e9 et innovant sur les technologies pertinentes, mais aborde \u00e9galement les principaux d\u00e9fis auxquels sont confront\u00e9s les restaurateurs ind\u00e9pendants dans leur activit\u00e9 quotidienne\", d\u00e9clare le Dr Christine Demen Meier, responsable de la chaire METRO d'innovation. La solution \u00e9ducative innovante d\u00e9velopp\u00e9e par l'\u00e9quipe de recherche compos\u00e9e du Dr Christine Demen Meier, de Caroline Guigou et d'Isabelle Vetterli utilise \u00e9galement des \u00e9l\u00e9ments de jeu pour am\u00e9liorer l'exp\u00e9rience d'apprentissage, motiver les participants \u00e0 poursuivre et les aider \u00e0 d\u00e9velopper une compr\u00e9hension du contenu num\u00e9rique.<\/p>\n<p>&nbsp;<\/p>\n<p><em>Cette derni\u00e8re \u00e9tude conclut l'activit\u00e9 de la chaire d'innovation Metro.
